ABOUT Vadacurry RECIPE

Flavourful curry from tamilnadu, a delicious curry made with fried vadas, to be served with some steamed rice on the side.

Ingredients Serving: 4

  1. For Vada
  2. 1/4 cup channa dal
  3. 1/4 cup tuvr dal
  4. 4 red chillies
  5. 1/2 tsp turmeric powder
  6. Fennel seeds 1 tsp
  7. Chopped shallots 10
  8. Curry leaves
  9. Coriander leaves
  10. Salt
  11. Oil for deep fry
  12. For Gravy
  13. Oil
  14. Mustard
  15. Fennel seeds 1/2 tsp
  16. 2 Green chillies slit
  17. Curry leaves
  18. Shallots 15-20
  19. Tomatoes 2 big
  20. Turmeric powder 1/2 tsp
  21. Coriander powder 1 tsp
  22. Garam masala 1 tsp
  23. Red chilli powder 1/2 tsp
  24. Salt
  25. Coconut milk thick 1/2 cup
  26. Coriander leaves

Instructions

  1. SOAK 1/4 CUP CHANNA AND TUVR DAL FOR 2 HOURS
  2. IN A BLENDER, ADD 4 RED CHILLIES, 1/2 TSP TURMERIC POWDER
  3. ADD REQUIRED SALT AND 1 TSP FENNEL SEEDS
  4. STRAIN WATER COMPLETELY. ADD SOAKED DAL.
  5. GRIND TO COARSE MIXTURE
  6. ADD CHOPPED 8-10 SHALLOTS
  7. ADD CURRY LEAVES
  8. ADD CORIANDER LEAVES. MIX
  9. DEEP FRY VADAS
  10. DEEP FRY TILL COLOR CHANGES TO GOLDEN
  11. KEEP IT ASIDE
  12. ADD 1 TBSP OIL. ADD MUSTARD. ALLOW TO CRACKLE.
  13. ADD 1/2 TSP FENNEL SEEDS AND FINELY CHOPPED GINGER GARLIC OR GINGER GARLIC PASTE
  14. ADD 2 SLIT GREEN CHILLIES AND 15-20 SHALLOTS
  15. ADD CURRY LEAVES. SAUTE
  16. ADD 2 CHOPPED TOMATOES
  17. ADD 1/2 TSP TURMERIC POWDER AND REQUIRED SALT
  18. ADD 1 TSP GARAM MASALA, CORIANDER POWDER AND 1/2 TSP RED CHILLI POWDER
  19. MIX
  20. ADD WATER AND CLOSE WITH A LID TO COOK TOMATOES
  21. MASH TOMATOES
  22. ADD VADAS
  23. YOU CAN CRUMBLE VADAS AND ADD TO GRAVY. BOIL FOR 5 MINUTES
  24. WHEN OIL SEPARATES, ADD 1/2 CUP THICK COCONUT MILK AND CORIANDER LEAVES
  25. MIX
  26. TURN OFF FLAME AND REST FOR 10-15 MINUTES
  27. VADAS ABSORB GRAVY AND BECOMES THICK
  28. SERVE HOT
