Ingredients Serving: 3

  1. Betel leaves/paan 6
  2. Gram flour 1/2 cup
  3. Salt to taste
  4. Asafetida a pinch
  5. Red chilli powder 1/2 tsp
  6. Green chutney 1/4 cup
  7. Dates tamarind chutney 1/4 cup
  8. Whisked sweet curd 1/2 cup
  9. Chaat masala 1 tbsp
  10. Roasted cumin powder 1 tbsp
  11. Red chilli powder 1 tbsp
  12. Fresh coriander 2 tbsp
  13. Nylon sev 1/2 cup
  14. Oil for frying

Instructions

  1. WASH, WIPE 6 BETEL LEAVES, MIX INGREDIENTS FOR THE BATTER
  2. TAKE 1 CUP GRAM FLOUR, ADD A PINCH OF ASAFOETIDA, SALT, RED CHILLI TO TASTE, WATER TO MAKE A BATTER
  3. COAT THE BETEL LEAVES WITH THE BATTER
  4. DEEP FRY IN HOT OIL ON LOW-MEDIUM HEAT
  5. FLIP & FRY FROM BOTH SIDES TILL GOLDEN BROWN & CRISP
  6. BREAK THE PAKORAS INTO 3-4 PIECES, PLACE ON A SERVING PLATE
  7. ADD 2-4 TBSP WHIPPED CURD ON TOP
  8. ADD 2 TBSP EACH OF TAMARIND & CORIANDER CHUTNEY
  9. SPRINKLE SOME CHAT MASALA & ROASTED CUMIN POWDER
  10. SPRINKLE SOME RED CHILLI POWDER, GARNISH WITH SOME CHOPPED FRESH CORIANDER
  11. SPRINKLE SOME THIN SEV ALL OVER, SERVE IMMEDIATELY
