ABOUT Kumro patay am boal bhape ( steamed boal/ wallago cat fish with raw mango pulp, wrapped in pumpkin leaf) RECIPE

This is a simple, less oil and delicious preparation of fish. The flavour of the dish gets enhanced to a new fresh level when mango is used in it and the taste of the dish is just awesome.

Ingredients Serving: 3

  1. Boal fish or wallago catfish 3 pieces
  2. Pumpkin leaves for wrap, 3 pieces
  3. 1/2 piece of a medium sized raw mango
  4. Grated raw mango 1 tbsp
  5. Yellow mustard seeds 1 tbsp
  6. Black Mustard seeds 1 tsp
  7. Poppy seeds 1/2 tbsp
  8. Green chillies, 3
  9. Turmeric 1,1/2 tsp
  10. Sugar 1/2 tsp (optional)
  11. Salt according to taste
  12. Mustard oil 1,1/2 tbsp

Instructions

  1. Wash and pat dry the fish pieces. Marinate them with salt and turmeric powder for 5 minutes.
  2. Now heat 1/2 tsp of oil in a pan, add marinated fish pieces and shallow fry them for 20-25 seconds. Don't fry the fish fully.
  3. Now remove the fish pieces from the pan and keep aside.
  4. Grind these ingredients together to a fine paste.
  5. Take out the paste from mixer and marinate the shallow fried fish pieces with the paste in a bowl. Also add grated raw mango, turmeric powder, salt, sugar and 1 tbsp mustard oil in it.
  6. Cover the bowl and marinate the fish for about 10 minutes.
  7. Now wash and pat dry the pumpkin leaves very carefully.
  8. Now take 1 or 2 drops of oil and grease all over the upper sides of the pumpkin leaves.
  9. Place a marinated fish piece at the centre of a pumpkin leaf , also keep one slitted green chilli on top it.
  10. Fold the leaf from each side, make it a square parcel.
  11. Now tie with thread.
  12. Now grease a pan with little amount of oil and place paturi's on it.
  13. Cover the pan with air tight lid and cook on medium flame for 15 minutes each sides.
  14. Now turn off the flame and remove the paturi's from pan. Serve hot with steamed rice.
