ABOUT Baked Paneer Kozzukattai with Tomato Frito. RECIPE

Kozukattai is steamed rice flour dumpling. To enhence the protein value of this SouthIndian dish, I have added Paneer to the rice flour , steamed them and than baked in Tomato Frito with Cheese.

Ingredients Serving: 4

  1. Rice flour 11/2 cup.
  2. Paneer 3/4 cup grated.
  3. Green peas boiled 1/2 cup
  4. Zeera 1 tsp
  5. Pepper powder 1/2 tsp
  6. oil 2 tbsp.
  7. Salt to taste
  8. Hot water 2 cups ( add according to need)
  9. For Tomato frito.
  10. Tomatoes 4 to 5 ( 350 to 400 grams) blanched and pureed.
  11. Onion 2 chopped in small cubes
  12. Garlic 5 cloves
  13. Ginger grated 1 tsp
  14. Green chilli 1 to 2 ( according to spicy you want)
  15. Salt to taste.
  16. Pepper powder 1/2 tsp
  17. Butter 1 tsp
  18. Cinnamon powder 1/2 tsp
  19. Sugar 2 tbsp
  20. Cheese cubes grated 3
  21. Coriander leaves chopped to garnish.
  22. Oil to grease palm.

Instructions

  1. Add required boiled water to the Rice flour for making dough.
  2. Mix with spetula. Mash boiled green peas and add to the flour. Let the flour cool a little to the room temperature.
  3. Add grated Planeer. Crush ( rub) Zeera between palms and add.
  4. Add salt, pepper and Oil. Mix and make a dough.
  5. Boil water in steamer . Grease your palms and make ball of dough.
  6. Press little between palms to flatten. Like this make all.
  7. Arrange in dumpling basket and steam for 15 minutes or till done.
  8. Simultaneously heat butter in a pan.
  9. Add chopped Onions . Saute. Add ginger and Garlic. Saute.
  10. Add crushed green chilli paste..
  11. Now add Pureed Tomatoes. Let the mixture boil for 5 minutes.
  12. Add Salt, Pepper and Sugar. Check the taste.
  13. Now turn off the heat. Add Cinnamon powder.
  14. Arrange your steamed Kozukattai in baking pan.
  15. Pour your Tomato Frito over it.
  16. Spread grated Cheese ( again protein) and bake in preheated oven ( 200 C ) for 15 minutes.( Time vary according to oven)
  17. Your Paneer Kozukattai is ready. Serve with garnish of coriander leaves.
