ABOUT Avocado Egg Salad RECIPE

A healthy, egg salad combined with the goodness of peas and avocadoes

Ingredients Serving: 3

  1. 150 gm white peas
  2. 3 ripe avocadoes
  3. 1 large onion
  4. 2 tomatoes
  5. 1.5 teaspoon garlic powder
  6. 1.5 tablespoon freshly crushed black pepper
  7. 3 hard boiled eggs
  8. 2 tablespoon of freshly chopped mint leaves
  9. 2 tablespoon of freshly chopped coriander leaves
  10. 100 gm boiled sweet corn kernels
  11. 2 tablespoon olive oil
  12. Salt to taste
  13. 1 tablespoon basil
  14. Juice of 1 lemon

Instructions

  1. Soak the peas for 4 hours and boil until they soften post soaking
  2. chop the avocadoes, onion, tomatoes and eggs into smaller pieces
  3. assemble the rest of the ingredients
  4. Place the boiled peas in a large salad bowl and add in the remaining ingredients one after the other
  5. Toss well to combine and serve immediately
