About Gundu ponglu/Appe/Paddu Recipe

This is a popular breakfast from South India. Each state has its own name for this dish. For example : In karnataka it is called paddu and in konkani, it is called appo. Andhra they call it, Gundu ponglu and in Tamil Nadu it is known as Paniyaram.

Gundu ponglu/Appe/Paddu

Ingredients to make Gundu ponglu/Appe/Paddu

  • 2 cups Parboiled rice
  • 1/4 cup urad dal
  • 1/4 cup beaten rice
  • 1tsp fenugreek / Methi
  • salt to taste

How to make Gundu ponglu/Appe/Paddu

  1. Wash and soak urad dal, rice, poha and fenugreek together for 5-6 hours
  2. After 6 hours of soaking grind it to a smooth batter (much like dosa batter)
  3. Add salt and keep the batter to ferment overnight.
  4. Next morning beat the batter nicely and heat the appe pan, (which is easily available in the market.
  5. Brush the cavities of appe pan with ghee or cooking oil and start filling.
  6. Cover the pan with a lid, cook on low flame for about a minute then turn all the paddus using small spoon or a knife. Cook on the other side till nice and crispy, repeat with the remaining batter as well.
  7. Serve hot with chutney or sambar

My Tip:

You can make onion appe by adding some chopped onion, green chillies and some freshly chopped coriander leaves or dill leaves. For crispy ponglu/appo, always fry on a low heat,
