ABOUT Carrot Halwa Mango Parfait Shots RECIPE

A delight for sure when with Eid round the corner, there is lots to do.This Parfait gives a different feel ,taste and style to both our traditional carrot halwa and Mango.Dont get surprised if your guests just say MaashAllah Eid dessert with a differance. Pressure cook fine grated carrots,roasted well with ghee and sugar,cardomom cooled and based .The healthy punch here is the hung curd layer,not cream in between the mango pieces and halwa.The Combo indeed is a sumptuos treat with juicy Alphonzo mango hung curd layer and subtly sweet Carrot halwa.

Ingredients Serving: 3

  1. For carrot halwa:
  2. 4 medium fresh juicy carrots
  3. 1/2cup pure milk
  4. 1tblspn ghee
  5. 2-3tblspn fine sugar
  6. 5-6 cardomom seeds
  7. For parfait:
  8. 1 cup hung curd beaten
  9. 2 mangoes firm ,yet ripe diced
  10. Some chopped almonds
  11. Shots glasses

Instructions

  1. Peel ,wash ,grate Carrots
  2. Get ready ghee sugar milk on side
  3. Add 1 glass water to the carrots put to boil in pressure cooker
  4. Boil 3-4 whistles,remove pressure
  5. Add milk ,ghee,sugar and cardamom seeds ,saute all mixing well
  6. Roast on high now for 2 minutes stirring till dry,add few chopped almonds keep on room temperature cool
  7. For Parfait:
  8. Arrange all ingredients to set your parfait
  9. Arrange clean dry shots glasses
  10. Add carrot halwa half way ,stuff lightly
  11. Fill little less than half
  12. Peel clean 2 mangoes and keep ready
  13. Cut these slices of mango into dice
  14. Top the carrot halwa shots with 2tspn full of hung curd in each
  15. Now top the carrot halwa with cream hung curd with dices of Mangoes
  16. Your parfait is ready now
  17. Top with few more chopped almonds and jamun strips to add color
  18. Serve cool or room temperature
