ABOUT Mangalore Buns (south special) RECIPE

Famous mangalore snack. Served for breakfast, tea time or just for munching !

Ingredients Serving: 10

  1. 2 ripe bananas (robust banana)
  2. 3 tbsp thick yoghurt
  3. 1 tsp Salt
  4. 1/2 tsp whole cumin
  5. 1 levelled tsp soda powder
  6. 1 tbsp Besan
  7. 1 cup sugar (you can add more or less as per sweetness)
  8. Oil for frying
  9. 3 and 1/2 cups flour (extra for dusting and rolling)

Instructions

  1. Peel bananas and mash in a mixing bowl.
  2. Add sugar, salt, yoghurt and mix everything well. Let the sugar dissolve.
  3. Add soda powder, jeera and mix well.
  4. Add besan and maida flour. Add little by little and mix using a spoon or spatula. No need to knead just incorporate the flour in the wet batter.
  5. You can add the flour as per requirement. Besan can also be avoided.
  6. Make a soft dough. No need of heavy kneading. Cover and let it rest for minimum 6 hrs in a warm place. If it is a cold area or season, you may require some more time.
  7. After the dough has fermented, take out small balls and roll into small puris. You can make small or bigger puris. Do not roll into very thin puris.
  8. Heat oil and fry till light brown on medium flame. Sugar contain may burn the balls if not fried on low flame.
  9. Remove and serve with chutney or sambhar.
