ABOUT BAIDA ROTI RECIPE

Baida roti is a pan fried flat bread stuffed with mutton or chicken mince combined with egg. It tastes so delicious and is q complete and filling meal.

Ingredients Serving: 4

  1. (For the Dough)
  2. Wheat flour .. 2 cups
  3. Oil .... 2 tsps
  4. Salt ..... 1 /2 tsp
  5. Water .... to knead.
  6. (For the Filling)
  7. Keema / minced meat ... 200 gms
  8. Onion ... 1/2 cup (sliced)
  9. Ginger paste .. 1 tsp
  10. Garlic paste .. 1 tsp
  11. Green chillies .... 1 (finely chopped)
  12. Turmeric powder .. 1/4 tsp
  13. Coriander powder .. 1 tsp
  14. Cumin powder .. 1/2 tsp
  15. Garam masala powder .. 1/2 tsp
  16. Red chilli powder .. 1/4 tsp (optional)
  17. Salt ... to taste
  18. Coriander leaves .. handful
  19. Eggs ... 2 (beaten with little salt)
  20. Oil .... as needed

Instructions

  1. Add oil and salt to the flour and knead a stiff dough adding sufficient water. Set aside.
  2. Now heat some oil in a pan and saute the onions until light pink.
  3. Add the ginger garlic paste and green chillies and stir fry for half a minute.
  4. Now add the minced meat and saute until it becomes brown adding a little water in between.
  5. Add the salt and the spice powders. Finally add the coriander leaves and mix.
  6. Now take a little portion of the dough and roll out a square shaped roti. On a griddle lightly roast it on both the sides. Repeat with all the rotis and set aside.
  7. Place one roti on the griddle and spoon the cooked mince in the middle.. Make a well and spoon the egg mixture.
  8. Carefully fold the roti over the mixture making it like envelope.
  9. Roast it adding a little oil. Flip the other side carefully and fry in the same way.
