Its name itself gets juices fliwing in the mouth. Dry , shallow fried, spicy masala filled bhindi is aheavenly experience in every bite.

Ingredients Serving: 2

  1. Bhindi -250 gm
  2. Gramflour (besan)-3 tbsp
  3. Cumin seeds-1/2 tsp
  4. Dry mango powder (aamchur powder)-1/2 tsp
  5. Turmeric powder-1/3 tsp
  6. Red chilli powder-1/3 tsp
  7. Garam masala powder-1/2 tsp
  8. Crushed garlic and green chilli or paste-1 tbsp
  9. Cooking oil-3 tbsp
  10. Salt to taste


  1. Wash and dry the bhindi, slit it for stuffing.
  2. In a bowl: Mix all the ingredients except bhindi, cumin seeds and oil (do not add water).
  3. Gently stuff the bhindi with prepared masala one at a time and keep it aside.
  4. Heat a pan, add cooking oil and let it heat.
  5. Add cumin seeds and fry it for few seconds, simmer the flame.
  6. Add the stuffed bhindi one by one in the pan.
  7. Cover the half of the pan and cook it on low flame for 6-8 minutes.
  8. Keep stirring or tossing in between.
  9. Cover the pan and cook it for a minute on low-medium flame.
  10. Fry it for 30 seconds on high flame to make it crispy, keep tossing/stirring.
  11. Turn off the flame and ready to serve.
