Shahi Kimami sewai ( Eid special )

Ingredients to make Shahi Kimami sewai ( Eid special )

  • 2cup sewai
  • 1 cup ghee
  • 1 cup khoya
  • 4cup sugar
  • 4 cup hot milk not boiling
  • 1 tsp green cardamom powder
  • 3-4green cardamom
  • 2 pinch saffron desolved into 1 tbsp milk
  • 10-15 badam chooped
  • 10-15 kaju chooped
  • 10-15 piste chooped
  • 10-15 kishmish

How to make Shahi Kimami sewai ( Eid special )

  1. Heat a pan . Add 2tsp ghee .add chooped dry fruits and fry them for 1-2 minutes on medium heat
  2. Take them out on a plate
  3. Naw add 2 tsp ghee into same pan and fry khoya for few minutes on medium heat
  4. To make sugar syrup add 2 cup sugar and 1 cup water into another pan stir coconcistant on high medium heat
  5. Bring a boil add hole cardamom as well .cook it til one thread consistancy
  6. Naw Add cardamom powder mix well and keep aside.
  7. Again heat a pan add all remaining ghee into this add sewai and fry them for 4-5minutes or become golden brown .stir continiously .
  8. Add hot milk not boiling .add fried khoya stir it add fried dry fruits and saffron milk mix softly .let bring a boil
  9. Cook it just 1-2minutes on medium heat
  10. Naw cover it with lid and cook on low for just 1 min
  11. Naw add sugar syrup turn the flame on high for 1 min
  12. Naw cover it and turn flame on low for few seconds
  13. Turn off heat let it rest for 5 minutes .naw give a mix gently
  14. i Eid spcial shahi kimami sewai is ready .garnish with some fried dry fruits. And serv.

My Tip:

Use hot milk not boilingsewai dont over cook sewai it's texcher should be soft at same time crunchi also
