Sheer khorma is a very famous dessert which is usually prepared during Eid and is also cherished by all groups. I added twist with Lauki which further enhances it taste and makes it healthy.

Ingredients Serving: 3

  1. Ingredients for zaffrani sheer khorma-
  2. 1 tablespoon ghee
  3. 1/4 cup vermicelli
  4. 4 cup milk
  5. 1/2 cup sugar
  6. 4 egg yolks
  7. 2 teaspoon vanilla extract
  8. 1/2 teaspoon saffron
  9. Ingredients for lauki ke lacche
  10. 1 cup grated bottle gourd
  11. 2 tablespoon sugar
  12. 1 teaspoon rose water
  13. 1 tablespoon finely chopped dry fruits
  14. Few drops of green food colour


  1. For zaffrani sheer khorma-
  2. Heat ghee in a deep pan, add the vermicelli and cook till it turns golden brown.
  3. Now add milk and saffron and cook for 10-12 minutes or till vermicelli is softened.
  4. After this add sugar and vanilla extract and cook till the sugar dissolves.
  5. Place the egg yolks into a bowl and whisk until pale and creamy.
  6. Pour a dash of the hot sheer khorma into the egg mixture and whisk to combine, then slowly pour in the rest of the sheer khorma whisking all the while.
  7. Pour the mixture back into the saucepan and bring to a gentle simmer. Stirring frequently and cook for 3-4 minutes.
  8. For lauki ke lacche-
  9. Take 1/2 cup water, sugar and grated bottle gourd in a pan and let it cook on low flame.
  10. And cook till water is evaporated.
  11. Turn off the flame and add rose water and green food colour.
  12. To serve put the zaffrani sheer khorma in a glass and top with lauki ka laccha and dry fruits.
