Ingredients Serving: 4

  1. Mutton 1kg
  2. mustard oil 1 cup
  3. onion large size 6 pieces
  4. tomato 1 piece large
  5. Garlic 10 cloves
  6. ginger paste 2 tablespoon
  7. cumin powder 2 tablespoon
  8. coriander powder 1 & half tablespoon
  9. Red chilly powder 2 tablespoon
  10. turmeric powder 1 & half tablespoon
  11. curd 1/2 cup
  12. Green cardamom 4 pieces
  13. Black cardamom 1 piece
  14. dalchini [cinnamon stick] - 1
  15. cloves - 2
  16. Whole red chilly [dried] 3 piece
  17. Bay leaf 2 piece
  18. mace - 1
  19. nutmeg powder - 1 pinch
  20. sugar 1/2 tablespoon
  21. salt
  22. ghee 2 tablespoon
  23. Garam masala powder 2 tablespoon

Instructions

  1. First wash the mutton pieces properly.
  2. marinate it with salt..turmeric powder and 3 tablespoon mustard oil
  3. leave it for 2 hours
  4. Take a pan and dry roast the above whole spices And grind it in a mixer
  5. Take a pressure cooker and add some mustard oil in it and then add Bay leaf & whole garam masala
  6. when the spices are starting to crackle then add chopped onion and add some salt.fry the onion on a low flame
  7. when the onion changes it's colour and it will be brown then add the garlic paste..cook it for 2 minutes
  8. Then add the beaten curd and cook it very well.when the beautiful aroma will come then add chopped tomatoes and cook it for 4 mins.
  9. when the tomatoes getting mashy then add ginger paste,cumin powder,turmeric powder,coriander powder and red mirch powder and small amount of water and sugar..cook it for 6 to 7 mins..
  10. after some time add the coarsely grounded dry roasted powder in it and cook for some time
  11. when oil will be separated from masala. .then add the marinated mutton and mix well and cook it in a high flame. .for 20 minutes
  12. then add little amount of water and pressure Cook it for 4 to 5 whistle. ..
  13. open the lead and add some ghee and garam masala powder in it and mix well
  14. shahi mutton kosha is ready to serve
