About Layali Lubnan Recipe

Layali Lubnan or Lebanese Nights is an amazing aromatic summer special , Eid special dessert . It’s basically a cold semolina pudding layered with rich whipped cream , pistachio powder . The authentic recipe includes a special edible Arabic gum . Mostly , this gum isn’t being used these days . There are lot of variations as per every natives preferences . The Arabs include creamy cheese to add more softness and texture to the pudding . I followed the creamy cheese version which I love personally .

Ingredients to make Layali Lubnan

  • semolina 1 cup equals 150 ml
  • Mozzarella cheese 1 cup
  • Granulated sugar 1.5 cups
  • Whole milk 6 cups
  • Orange blossom water 3 tablespoons
  • Rose water 1 tablespoon
  • Whipping heavy cream 1 .5 cup
  • pistachio powder 1/4 cup
  • Desiccated coconut 1/4 cup

How to make Layali Lubnan

  1. Heat a pan .
  2. Roast the semolina in low heat till it releases aroma .
  3. Don’t roast till brown .
  4. Boil 6 cups milk in a wide sauce pan .
  5. Add sugar to the milk .
  6. Add mozzarella cheese and stir till it melts completely .
  7. Add rose water and orange blossom water .
  8. Now add the roasted semolina gradually while stirring continuously the other hand . Simmer the flame while doing this .
  9. Let the Sooji and cheese cook and form a glossy smooth texture . Switch off the stove .
  10. Transfer the content to the serving bowls .
  11. Bring to room temperature .
  12. Then refrigerate for 1 hour for the pudding to set .
  13. Take out the pudding from the fridge .
  14. Spread whipping cream on top . Use whipping cream to form a thick layer .
  15. Refrigerate again for minimum 40 minutes .
  16. Garnish with pistachios powder and desiccated coconut just before serving .
