ABOUT Mushroom Sukka RECIPE

Sukka is a Mangalorean speciality, a dry dish made with a beautiful blend of spices and coconut. The authentic way of preparing this involves dry roasting the spices, grinding them with coconut to a very coarse paste and allowing the mushrooms to cook in this spicy mixture.

Ingredients Serving: 2

  1. Mushrooms 1 cup, cleaned and chopped
  2. Onion 1, chopped finely
  3. Curry Leaves 8 to 10
  4. Oil 1 tbsp
  5. Salt to taste
  6. Water 2 tbsp
  7. To roast and grind to masala:
  8. Cumin or Jeera - 1 tsp
  9. Peppercorns - 1 tsp
  10. Turmeric powder - 1 tsp
  11. fennel seeds - 1 tsp
  12. Coriander seeds - 1 tsp
  13. Fenugreek seeds - 1 tsp
  14. Poppy Seeds - 1 tsp
  15. Dry Red Chillies - 4-5 nos
  16. Tamarind pulp - 1 tbsp
  17. Garlic - 10
  18. Grated Coconut - 1/2 cup
  19. Oil - 1 tbsp

Instructions

  1. Gather the ingredients. Clean the mushrooms in hot water with pinch of turmeric powder. Then chop them and keep them ready.
  2. In a pan, heat oil and add the items to roast one by one. Roast all the items till a nice aroma wafts.
  3. Add the tamarind pulp and switch off. Let it cool. Then grind to a coarse paste. Keep aside.
  4. In the same pan, heat oil, add curry leaves, once they splutter add the onions, saute well.
  5. Once the onions turn golden brown, add the chopped mushrooms and saute well till they wilt slightly.
  6. Add the ground masala, salt and mix well. Add water and cover it. Cook covered for 5-10 minutes on medium heat.
  7. Open and cook till it goes dry.
  8. Serve hot with steamed rice or neer dosa.

hi. i tried this recipe and it turned out well. however i did a little change by cooking garlic with the onions.. thanks for sharing the recipe... :blush:
