Ingredients Serving: 6

  1. Maida - 1 1/2 cups
  2. Butter -1/2 cup (Room Temperature )
  3. Sugar -1/4 tsp
  4. Baking Soda -1/4 tsp
  5. Curd - 2 tbsp
  6. Water -1/4 cup
  7. Oil -To Fry
  8. Sugar Syrup :
  9. Sugar -1/2 cup
  10. Water -1/2 cup
  11. Lemon juice - 1 tsp

Instructions

  1. In a bowl cream the butter with sugar and baking soda with your hands .Once its becom frothy add the curd and mix it well.Gradually add the flour.
  2. Mix it well,now the mixture looks like crumble .Add the water to make a sot dough .Knead it for 10 mins continuosly until the dough is smooth and without any craks.Cover with lid and rest it for 10 mins.
  3. In a vessel add sugar &water to make a syrup,once the sugar dissolves and boil it well until it reaches one string consistency that is if you touch the syrup in between thumb and forefinger a single thread will be form.Its correct stage.
  4. Switch off the flame and add the lemon juice.Now take the dough and make equal size ball.Now take a ball press it with your palm and make a hole in the centre.
  5. OR take a ball,pinch it with edges to make a swirl .Heat enough oil in a kadai ,check by adding a pinch of batter if it rises immediately then its the correct stage.
  6. Add the 3 badhushas ,switch off the flame.it will be cooked in preheated oil,when the bubbles disappear switch on the flame and cook it in very low flame.Fry it on both sides until golden brown.
  7. Drain it in tissue paper then add it in sugar syrup.Dip well on both sides for 2 mins,then transferrred it into a greased plate.Once the sugar syrup turns non sticky stored it in airtight container upto a week
