ABOUT Balushahi RECIPE

This is a North Indian delicacy, a classic dessert.It is flakey from the outside and soft from inside.

Ingredients Serving: 10

  1. Maida/All purpose flour 1 cup
  2. Salt 1/4 tsp
  3. Baking powder 1/4 tsp
  4. A pinch of baking soda
  5. Ghee 1/4 cup
  6. Curd/Yogurt 1/4 cup
  7. Chopped almonds 1tsp
  8. For sugar syrup -
  9. Sugar 1 cup
  10. Water 1/4 cup
  11. Cardamom powder 1/4tsp
  12. A pinch of saffron

Instructions

  1. Mix maida, salt, baking soda and baking powder in a bowl.Add ghee and mix nicely with your finger tips.Add yogurt and mix well.If required add little water and knead to make a soft dough. Cover and keep the dough aside for 30 minutes.
  2. Now prepare sugar syrup- Heat sugar, water in a pan. Cook till the syrup reaches a 1 string consistency. Now add cardamom powder and saffron mix well and remove from heat.
  3. Make 10-12 equal sized balls from the dough.Do not smoothen them much.Press in the center with your thumb.
  4. Heat oil in a heavy bottom pan.When the oil is slightly hot, drop the Balushahis in the oil very gently.Do not heat the oil very much otherwise the balushahi will fry from outside but will remain raw from inside. Fry on very low heat till golden brown.
  5. Remove from heat once done. immediately dip the balushahi in the sugar syrup for 1-2 minutes and remove on a plate and garnish with chopped almonds. You can store balushahi in an airtight container for up to 2 weeks.

Add lemon water while boiling the sugar syrup to avoid crystalizing

hi Shashikala!easy recipe,,the balushahi's came out well but the sugar syrup kept crystallising please give some tips so next time I can improve :relaxed:
