ABOUT Chhanar jilipi or paneer jalebi RECIPE

Chhanar jilipi or paneer jalebi is a sweet made of cottage cheese, paneer or chhena. A famous sweet of Bengal. Very easy to make yet lip-smacking taste.

Ingredients Serving: 8

  1. milk 4 cup
  2. Curd 4 - 5 tablespoon
  3. Refined flour or maida 2 tablespoon
  4. Semolina or suji 2 tablespoon
  5. Milk 3 tablespoon
  6. Milk powder - 2 tablespoon
  7. Cardamom powder 1 & 1/2 teaspoon
  8. Saffron or kesar few strands
  9. sugar 1 cup
  10. Water 1/2 cup
  11. Oil or ghee/clarified butter for deep frying
  12. Chopped pistachio to garnish

Instructions

  1. Heat milk in a heavy bottom pan.
  2. When it starts to rolling boil add 4 tablespoon curd. Stir the milk. It will curdle. If require add 1 tablespoon curd more.
  3. When the greenish whey or water and paneer separated, strain the paneer or cottage cheese with a maslin cloth. Hang for an hour.
  4. When the water strain out completely take out the paneer on a plate.
  5. Soak 2 tablespoon suji or semolina and few strands of saffron in 3 tablespoon warm milk.
  6. For sugar syrup mix sugar, water, 1 teaspoon cardamom powder and few strands of saffron in a pan and boil on low flame for 5 - 8 minutes or until the syrup becomes 1 string consistency.
  7. Knead the paneer and make a lump free dough.
  8. Add milk powder, baking powder, 1/2 teaspoon cardamom powder, maida or refined flour and soaked suji or semolina and saffron.
  9. Knead again till it becomes a smooth dough.
  10. Make 15 - 16 balls or 18 small balls.
  11. Take a ball and make a long rope. Now wind it like a coil. Make all the balls like this.
  12. Heat sufficient oil or ghee in a pan.
  13. Fry all the jalebi on medium heat.
  14. Dip them in the sugar syrup immediately.
  15. Soak them in sugar syrup for 2 hours.
  16. After 2 hours boil it again and let it soak for 1 hour more.
  17. Garnish with chopped pistachio.
  18. Serve hot or cold.
