  1. For briyani:
  2. Goat meat 500 gms
  3. Zeera rice 3 cups
  4. Ghee 2 tblsp +2 tsp
  5. Lemon juice 1 tsp
  6. Briyani masala 1 tsp optional
  7. Onion 2
  8. Cloves 4 pcs
  9. Star anise 1
  10. Marati mokku 1
  11. Nutmeg powder 1/4 tsp
  12. Bay leaf 1
  13. Cinnamon 2 pcs
  14. Tomatoes 2
  15. For green masala:
  16. Onion 2
  17. Garlic 15 pods
  18. Ginger 3 pcs
  19. Mint leaves 1 cup
  20. Coriander leaves 1 cup
  21. Curry leaves 1 sprig
  22. Dry red chillies 5
  23. Cloves 12
  24. For mutton semi masala:
  25. Onion 2
  26. Tomatoes 2
  27. Goat meat 500 gms
  28. Coconut oil 2 tsp
  29. Coriamder leaves 4 tblsp
  30. To roast and grind:
  31. Onion 2
  32. Cardamom 3
  33. Cinnamon 5
  34. Coconut oil 2 tsp
  35. Garlic 15 pods
  36. Pepper 2 tsp
  37. Ginger 2 pcs
  38. Turmeric powder 1/4 tsp
  39. Red chilles 4
  40. Cloves 6
  41. Coriander seeds 2 tblsp

Instructions

  1. FOR MEAT SEMI MASALA. INGREDIENTS: ONION 2, TURMERIC POWDER 1/4 TSP, DRY RED CHILLIES 4, CORIANDER SEEDS 2 TBLSP, PEPPER 2 TSP, CARDAMOM 3, CINNAMON 5, CLOVES 6, GINGER 2 PCS, GARLIC 20 PODS, COCONUT OIL 2 TSP
  2. HEAT OIL ,ADD ONION AND SAUTE TILL BROWN ( DO NOT BURN)
  3. EMPTY THE FRIED ONIONS TO A BOWL
  4. IN THE SAME PAN ROAST REST OF THE INGREDIENTS EXCEPT GINGER AND GARLIC TO GOLDEN BROWN.
  5. WHEN FRIED SWITCH OFF THE FLAME, ADD FRIED ONIONS, GINGER, GARLIC AND MIX ONCE
  6. WHEN COOLED DOWN, GRIND IT TO FINE PASTE
  7. HEAT 2 TSP COCONUT OIL IN COOKER, ADD 1 TSP CUMIN, ADD 2 CHOPPED ONIONS AND SAUTE TILL TRANSLUCENT
  8. ADD CHOPPED TOMAOTES, CURRY LEAVES AND FRY TILL MUSHY
  9. ADD GROUND MASALA
  10. BOIL FOR 5 MINS IN LOW FLAME ,THEN ADD CLEANED GOAT MEAT
  11. ADD SALT AND MIX WELL
  12. CLOSE COOKER AND BOIL FOR 5 WHISTLES OR TILL MEAT COOKS TO SOFT.
  13. ADD CORIANDER LEAVES ,MIX AND KEEP IT ASIDE TILL BRIYANI GETS PREPARED.
  14. FOR BRIYANI: FOR GREEN MASALA ONION 2, GARLIC 15 PODS, GINGER 1" 3 PCS, CINNAMON 4 PCS, CLOVES 12, DRY RED CHILLIES 5, CURRY LEAVES A SPRIG, CORIANDER LEAVES, MINT LEAVES 1 CUP
  15. GRIND THE GRINDING INGREDIENTS TO FINE PASTE
  16. TO SAUTE ONIONS 2, TOMATOES 2 MEDIUM SIZED, CINNAMON 2 PCS, CLOVES 4, BAY LEAF 1, NUTMEG POWDER 1/4 TSP, STAR ANISE 1, MARATI MOKKU 1
  17. HEAT 2 TBLSP GHEE IN COOKER, ADD MASALA INGREDIENTS AND SAUTE IN LOW FLAME TILL AROMA, ADD ONIONS AND FRY
  18. WHEN ONIONS TURNED GOLDEN BROWN, ADD CHOPPED TOMATOES AND SAUTE TILL MUSHY
  19. ADD GROUND PASTE
  20. AND FRY TILL OIL SEPERATES
  21. ADD CLEANED GOAT MEAT, SALT,MIX AND COOK FOR 5 WHISTLES TILL MEAT COOKS SOFT
  22. ADD 3 CUPS SOAKED RICE
  23. MIX WELL
  24. ADD 6 CUPS WATER,
  25. ADD BRIYANI MASALA (OPTIONAL) ,MIX
  26. CLOSE COOKER AND COOK FOR 2 WHISTLES OR CLOSE WITH GLASS AND COOK IN HIGH FLAME FOR 5 MINS,THEN OPEN COOKER MIX ONCE AND AGAIN CLOSE FOR 5 MORE MINS (SECOND METHOD IS FOOL PROOF)
  27. WHEN DONE ADD 1 TSP LEMON JUICE, 1 TSP GHEE MIX GENTLY AND SERVE
  28. SERVE HOT WITH MUTTON SEMI MASALA AND RAITA
