This beautiful Pudding is a great refreshing combination and very ideal for hot summers

Ingredients Serving: 2

  1. Mango puree--1 cup
  2. Chia seeds--30 grams
  3. Low fat Yogurt--1 cup
  4. Coconut powder--1/2cup
  5. Vanilla essence-- 1 tsp
  6. Figs -- few
  7. Cashews, Almonds, Resins--few
  8. Sugar as per taste(optional)

Instructions

  1. Instructions Soak chia seeds in water and keep it aside for 20-30 minutes. Peel and cut mango into chunks and put into a blender. Add juice of 1 lime to blender. Blend until smooth and thick.
  2. Whisk low fat yogurt until smooth and add chia seeds, vanilla essence and Coconut flour to make it more thickened and tasty. You can add sweetness too if you want.
  3. Assemble your pudding: place a couple of spoons of mango puree, then add a layer of chia pudding and repeat. Top your pudding with nuts if your choice and figs. Serve
