ABOUT Mushroom Mappas RECIPE

Mappas is a curry which incorporates coconut milk as one of the vital ingredients. I have used Mushrooms to make this Kerala fame Mappas .

Ingredients Serving: 3

  1. Coconut milk thick 2 cups
  2. Button mushroom 300 grams chopped
  3. Coconut oil 2 tablespoons
  4. Onions 3 medium finely chopped
  5. Ripe tomato big 1 finely chopped
  6. Fennel seeds crushed 2 teaspoons
  7. Garlic 4 crushed to paste
  8. Ginger paste 1/2 teaspoon
  9. green chillies 3
  10. Turmeric powder 1/2 teaspoon
  11. Red Chilli Powder 1/2 teaspoon
  12. Garam Masala Powder 1/2 teaspoon
  13. Coriander powder 3/4 teaspoon
  14. Salt as preferred
  15. Curry leaves a sprig
  16. Cilantros finely chopped fistful

Instructions

  1. Heat coconut oil in a wok .
  2. Add crushed fennel seeds .
  3. Add green chillies .
  4. Add curry leaves .
  5. Add crushed garlic paste .
  6. Add ginger paste .
  7. Sauté until raw smell leaves.
  8. Add onions and sauté until translucent.
  9. Add 1/2 the salt .
  10. Add chopped tomato . Sauté till mushy and glossy .
  11. Add turmeric powder .
  12. Add red chilli powder .
  13. Add garam masala .
  14. Add coriander powder .
  15. Sauté the dry powders for few seconds .
  16. Add the chopped mushroom pieces .
  17. Mix and cook for 2 minutes covered .
  18. Mushroom starts releasing its moisture .
  19. Now add the coconut milk .
  20. Cover and cook for 5 minutes in low to medium heat .
  21. Add the remaining salt .
  22. Open and cook in high heat to reduce curry to thick consistency .
  23. Sprinkle cilantros . Switch off .
  24. Serve hot with steamed rice or Parottas .
