ABOUT Pulled Chicken tacos RECIPE

Mexican style easy and delicious chicken tacos.

Ingredients Serving: 4

  1. 2 tbsp Oil
  2. 1 medium Onion finely chopped
  3. 1 sweet Red pepper
  4. 6 cloves Garlic finely chopped
  5. 6 large boneless skinless Chicken thighs (about 1 1/4 lb)
  6. 4 large canned plum Tomatoes with puree (juices)
  7. 1 chipotle Pepper in Adobo sauce chopped
  8. 1/4 cup Water
  9. Salt to taste
  10. 1/2 tsp ground Cumin
  11. 1/2 tsp smoked Paprika
  12. 1/2 tsp Mexican chilli powder or Cayenne pepper
  13. 1/2 tsp Oregano
  14. 1/4 cup finely chopped fresh Coriander leaves
  15. juice from half a lemon
  16. 8 whole Wheat or Corn Tortillas
  17. Additional Toppings:
  18. Avocados chopped
  19. Tomatoes chopped
  20. Red Onions slices
  21. Red cabbage chopped
  22. Lettuce Guacamole and shredded Cheese


  1. Warm oil in deep skillet over medium high heat.
  2. Add onions, sweet peppers and garlic. Saute for about 5 min until onions are lightly browned and softened.
  3. Add chicken and brown again for 5 min. Add tomatoes, chipotle pepper, water, salt and spices.
  4. Stir to mix, cover skillet and cook on low heat for 1 hour until chicken is very tender. Uncover skillet and cook for a further 10 minutes until chicken is falling apart.
  5. Remove chicken to bowl and continue cooking sauce until it is very thick, another 10 min.
  6. Shred chicken with two forks and add back to sauce in skillet. Fold in chopped coriander and lemon juice. Transfer to serving bowl.
  7. Warm tortillas and place on table along with chicken and assorted toppings for people to assemble their own tacos.
