Ingredients Serving: 6

  1. A bowl of mixed vegetables (cut into 1inch) I used beans carrot potato cauliflower and peas
  2. onion 1 finely chopped
  3. tomato 1big finely chopped
  4. green chilly , curry leaves , coriander leaves
  5. bay leaf
  6. ginger garlic paste 1tsp
  7. kasoori methi
  8. red chilly powder 2tsp
  9. garam masala powder 1/2tsp
  10. oil water and salt as needed
  11. TO GRIND
  12. coconut shredded 1/3cup
  13. green chillies 2nos
  14. fennel seeds 1/2tsp
  15. cardamon 2nos , Cloves 2nos and cinnamon 1inch
  16. fried gram dal 2tsp
  17. cashew nuts 6nos


  1. Take a big pan add ghee or oil . Then fry the bay leaf and finely chopped onions .
  2. when the onion is light brown add in the gag paste and tomato .
  3. Fry for two mins and then add in all the chopped vegetables .
  4. Stir well in high heat for a minuite .
  5. Now add in the red chilly powder and turmeric powder .
  6. Add in some salt and one cup water . Allow it to cook for fifteen mins or till the vegetables are done .
  7. Once the vegetables are 3/4th cooked add in the ground masala paste along with the garam masala and salt .
  8. Allow it to boil and then simmer it for ten mins or the kurma gets its consistency . Sprinkle kasoori methi at this stage .
  9. Finally garnish it with some chopped coriander leaves .
