Hotel style Veg Korma

Ingredients to make Hotel style Veg Korma

  • A bowl of mixed vegetables (cut into 1inch) I used beans carrot potato cauliflower and peas
  • onion 1 finely chopped
  • tomato 1big finely chopped
  • green chilly , curry leaves , coriander leaves
  • bay leaf
  • ginger garlic paste 1tsp
  • kasoori methi
  • red chilly powder 2tsp
  • garam masala powder 1/2tsp
  • oil water and salt as needed
  • TO GRIND
  • coconut shredded 1/3cup
  • green chillies 2nos
  • fennel seeds 1/2tsp
  • cardamon 2nos , Cloves 2nos and cinnamon 1inch
  • fried gram dal 2tsp
  • cashew nuts 6nos

How to make Hotel style Veg Korma

  1. Take a big pan add ghee or oil . Then fry the bay leaf and finely chopped onions .
  2. when the onion is light brown add in the gag paste and tomato .
  3. Fry for two mins and then add in all the chopped vegetables .
  4. Stir well in high heat for a minuite .
  5. Now add in the red chilly powder and turmeric powder .
  6. Add in some salt and one cup water . Allow it to cook for fifteen mins or till the vegetables are done .
  7. Once the vegetables are 3/4th cooked add in the ground masala paste along with the garam masala and salt .
  8. Allow it to boil and then simmer it for ten mins or the kurma gets its consistency . Sprinkle kasoori methi at this stage .
  9. Finally garnish it with some chopped coriander leaves .

My Tip:

You can even use 1/2cup of milk and 1/2cup water while cooking the vegetables . Adding a bit of mint leaves can be done too . Adding 1tsp of curd or 1/2tsp lime juice while cooking the vegetables gives a better flavour too .
