ABOUT Patishapta RECIPE

Patishapta is a traditional Bengali pancake recipe where the Pan cake is rapped with coconut stuffing. This special recipe is from east Bengal where we used coconut filing which is made with Jaggery. This sweet dish we prepared at the time of Paush Shankranti.

Ingredients Serving: 4

  1. Rice flour -1/2 cup
  2. semolina/ Sooji -1/2 cup
  3. Maida -1/4 cup
  4. Grated coconut-1 cup
  5. Jaggery-1 cup
  6. sugar -1/2 cup or as per sweetness

Instructions

  1. Take a bowl , put the rice flour , maida , semolina, sugar and water and make a fine batter with out any lump on it and soak it for an hour or more .
  2. For the coconut filling , finely grate one coconut and set aside .
  3. Heat the pan and add the jaggery and sauté it . after sometimes add the grated coconut and stir it gently on a low flame .
  4. keep on sautéing till the coconut fully mixed with jaggery
  5. once you find coconut and jaggery is not sticking the pan , then off the flame and keep it aside .
  6. Now mix water and oil together in a bowl
  7. For the crapes , heat the tawa and grease it .
  8. Now Place a ladle full of batter on the pan and rotate the pan to cover the surface with the batter.
  9. when it become slight brown in color flip it off the other side to cook
  10. when both the side cooked properly , put the coconut filling inside the crapes and roll the crepes .
  11. Press the crepes with a spatula and give it a crepe like shape , and remove immediately .
  12. like the same process prepare the rest of the Patishapta and serve warm .
