Ingredients Serving: 4

  1. Sweet potatoes 250 grams
  2. All purpose flour 1 cup
  3. Gratted jaggery 1 tablespoon
  4. Oil for kneeding 3 tablespoon
  5. Water as required
  6. Refined oil for frying 2 cups
  7. Pure Ghee 1 tablespoon
  8. Cardamom powder ½ teaspoon
  9. Beetroot color ½ teaspoon

Instructions

  1. Boil and mash up the sweet potatoes.
  2. Now roast it in 1 tablespoon pure ghee nicely.
  3. Once cooled add gratted jaggery, dry fruits and cardamom powder and mix it well.
  4. Sieve the flour properly, now take half of the portion add beetroot color and make a fine dough with the help of water and refined oil. And make dough with the rest flour. Cover and keep it aside for 10 minutes.
  5. Now take small portion from it and roll it in shape of poori, add sweet potato stuffing in the middle cover it from the corners, keep it inside the ghujiya mould and fry it on a low flame.
  6. Serve.
