Ingredients Serving: 6

  1. Cream 1 kg
  2. Curd 1 cup
  3. Water 4 cups


  1. Collect the cream gathered on the milk daily for 7-15 days and refrigerate it daily..
  2. Now add 1 cup of curd in the vessel and mix well...allow it to ferment for 8 hrs..
  3. Once it ferments...whisk well with whisker or Rai...
  4. Now add water in the cream and whisk as much as possible so that all the butter gets collected and form lumps..
  5. Collect all the lumps of butter into a thick pan..remove all the extra water from it...if required..add all the water...whisk again and remove all extra water from it so that I get as much as ghee from the butter..
  6. Heat the butter in the thick bottomed pan on slow flame till ghee forms..keep stirring in between..
  7. Finally when you are able to see that ghee is being separated..keep stirring as here the leftovers stick to the bottom of the base..
  8. Filter the ghee into clean vessel ..store in a container ..
