ABOUT Eggless Choclate Whoppie Pies RECIPE

The whoopie pie is a mini chocolate cake sandwich in cookie form. It is made of two round pieces of chocolate cake, with a creamy filling or frosting sandwiched between them. The original flavor of whoopie pies is chocolate, the batter is soft, something between a cake batter and a cookie dough, and the texture of the cake is tender. Whoopie pies taste like a really good frosted chocolate cake.

  17. Nutella 3/4 Cup
  18. Milk 2-3 tbsp

Instructions

  1. Measure3/4 cup of milk. Stir in 1 tablespoon of lemon juice or white vinegar.
  2. Let the mixture stand at room temperature for 5 to 10 minutes.
  3. When it is ready, the milk will be slightly thickened and you will see small curdled bits.
  4. Line baking tray with baking paper and keep aside.
  5. In a large mixing bowl, beat the butter, brown sugar and granulated sugar until pale and creamy
  6. Add curd and vanilla extract and beat until well combined.
  7. Add in the baking soda, all purpose flour and cocoa powder.
  8. Add half the buttermilk and gently fold with a spatula, before adding the rest of the buttermilk.
  9. When the mixture is combined, it will be quite wet similar to cake batter.
  10. Cover the batter with plastic wrap and keep in the freezer for 30 minutes
  11. This will help firm up the mixture so you can easily roll the batter into balls using your hands, like you would for cookies.
  12. They will be a bit sticky but rolling them in your hands will help achieve a nice smooth finish.
  13. Preheat the oven at 180*C for 10 minutes.
  14. Place the cookies onto the prepared baking tray, leaving space for them to spread out when cooking.
  15. Bake for approximately 8-10 minutes
  16. Leave them to cool for a few minutes and then transfer the cookies onto a wire rack.
  17. While they are cooling, make the Nutella frosting.
  18. To make the icing, beat the butter until creamy.
  19. Add the icing sugar, one cup at a time, and beat with until smooth and creamy.
  20. Add the vanilla and beat again.
  21. Then add the Nutella and mix through, adding the milk as needed
  22. The frosting should be thick and easy to apply.
  23. Pipe the icing onto one whoopie pie before placing another on top.
  24. Continue until all whoopie pies are complete.
