ABOUT Oatmeal-Figs Bars RECIPE

Oatmeal and figs bars are chewy, fig filled and also nutritious. These bars are made on a lighter side. My kids love anything and everything made from oatmeal. After making several versions of oats cookies, I was thinking of making bars out of it using figs jam. I made it healthy by using very less brown sugar and added wheat flour to oatmeal instead of Maida. These bars were so delicious that my kids and I finished them off the same day. They are good for carrying as snacks tiffin for school so you know your kids get something healthy to snack on.

Ingredients Serving: 4

  1. 3/4 cup dried figs
  2. 1/2 cup water
  3. Juice of 1 lemon
  4. 3/4 cup instant oats
  5. 1/2 cup wheat flour
  6. 1/4 teaspoon of baking soda
  7. 2 tablespoons of brown sugar
  8. 1/8 cup melted butter
  9. Few tablespoons cream as required
  10. Pinch of salt

Instructions

  1. Preheat oven at 170C for 15 minutes.
  2. Grease a cake tin. I used 6×4 inch rectangle tin.
  3. In a sauce pan heat 3/4 cup chopped dried figs with 1/2 cup water and juice of 1 lemon till the water thickens a little. Cool and grind into a smooth paste.
  4. In a bowl mix together 3/4 cup instant oats + 1/2 cup wheat flour + 1/4 tsp of baking soda + 2 tablespoons of brown sugar (if you like you may add more sugar).
  5. Melt 1&1/2 tablespoons of butter and mix with the flour. Add cream to bring everything together like a cookie dough. I used salted butter. If you are using ghee or unsalted butter, add a pinch of salt to the dough.
  6. Divide the dough in two portions.
  7. Press one portion of dough onto the bottom of the tin and spread it as evenly as possible.
  8. Spread the figs sauce that we prepared.
  9. Now shape the second portion of dough on a cutting board into a rectangle that's fits in the pan and place over the sauce. Press gently.
  10. Bake for 25 minutes.
  11. Cool and invert over a chopping board.
  12. Slice and serve.
  13. I sprinkled some brown sugar on top before baking, as my girl wanted it that way.
