ABOUT Scallion butter pinwheels ( Eggless ) RECIPE

A savory , flavorful pinwheel rolls / bread . A perfect snack for monsoon evenings with a cup of hot spiced tea . I always make sure to avoid refined flour in my recipes . These pinwheels are free from Maida .

Ingredients Serving: 7

  1. Whole wheat flour 1 cup
  2. Salt 1 teaspoon
  3. Instant yeast dry 1 tablespoon
  4. Lukewarm milk 1/4 cup
  5. Sugar 1/4 teaspoon
  6. Soft butter unsalted 1/4 cup
  7. For the filling :
  8. Scallions finely chopped 4 tablespoons
  9. Black whole pepper freshly crushed 2 teaspoons
  10. Melted unsalted butter 6 tablespoons

Instructions

  1. In a bowl , add yeast in 3 tablespoons warm milk . Add sugar and dissolve in yeast . Rest till mixture turns frothy .
  2. In a wide bowl , add flour and salt . Mix all together .
  3. Add yeast milk .
  4. Add butter .
  5. Add warm milk gradually and knead to a smooth soft dough . Knead the dough for 10 to 15 minutes in front and back moves.
  6. Cover and rest the dough in a warm place for 2 hours or until dough is proofed / doubled in size .
  7. Proofed dough is ready .
  8. In a bowl , take melted butter , add scallions and pepper to it . Mix and keep aside .
  9. Knead the dough to release air bubbles .Now divide the dough into two .
  10. Roll one dough to a thin large sheet .
  11. Likewise roll another dough to another large sheet .
  12. Spread scallion butter filling on one sheet .
  13. Stack another sheet on the first one .
  14. Spread the filling on the second .
  15. Now roll the layered sheets into one single log in small pleat steps .
  16. Now slice the log into equal sized pinwheels .
  17. Brush the pinwheels with leftover scallion butter .
  18. Arrange the pinwheels on a parchment lined baking tray .
  19. Bake inside a preheated cooker for 35 to 40 minutes in medium heat until golden and texture looks crunchy .
  20. Scallion pinwheels are ready to serve .
  21. Serve hot .
