ABOUT Cajun Chicken Italian Pasta RECIPE

The Cajun chicken pasta is a fusion of Italian and United States Southern cuisines. This is my recipe for the Cajun chicken pasta . You can taste the freshness of herbs like basil and parsley and the kick from cajun spice and cayenne.

Ingredients Serving: 2

  1. 3/4 cups Penne Pasta
  2. 1 cup chopped ripe tomatoes
  3. 1/2 cup finely chopped onions
  4. 1 cup sliced mushrooms
  5. 2 garlic cloves crushed and finely chopped
  6. 1/4 tsp finely chopped fresh basil
  7. 1/8 tsp dried or fresh chopped parsley
  8. 2 skinless boneless chicken thighs
  9. 2 tsp cajun spice seasoning
  10. 1/4 tsp cayenne ( adjust as per your spice preference )
  11. 1 tsp italian seasoning
  12. salt as per taste
  13. 1/4 cups grated parmesan cheese + 2 tbsp for garnishing
  14. 1/3 cups mozzarella cheese
  15. 1 tbsp butter or margarine


  1. Wash and clean the chicken thighs in cold water and cut into small bite size pieces. Marinade the chicken with cajun spice seasoning, cayenne and pinch of salt . Let it rest for 10 minutes.
  2. Cook the pasta al dente for 8-10 minutes in a pot of salted boiling water. Drain the pasta and wash it in cold water to stop it cooking. Keep it aside. Preserve 1 cup of the pasta water.
  3. Heat a pan and add the butter. Add onions and garlic. Saute till the onions become soft and translucent but do not cook the onions to brown. Add the chicken and saute them on medium high for two to three minutes. Add the mushrooms into the pan. The mushrooms leave water on heat. Continue to cook on medium high till all the water evaporates.
  4. Add the chopped tomatoes, basil, salt as per taste and cook on medium heat for another 10-12 minutes till the tomatoes and the mushrooms become soft and the chicken is cooked.
  5. Add the pasta water and milk into the pan and bring the mixture to a boil. Lower the flame and add mozzarella cheese, parmesan cheese, parsley and Italian seasoning into the pan.
  6. Continue to cook on low medium to medium heat till all the cheese melts in the mixture and the mixture thickens. Add the cooked pasta. Simmer on low flame for another 2-3 minutes. Turn off the gas.
  7. Serve the pasta hot and garnish it with the parmesan cheese.
