ABOUT Mint Coriander Fried Rice RECIPE

Fried Rice is a dish of cooked rice that has been stir-fried in a wok or a frying pan and is usually mixed with other ingredients such as eggs, vegetables, seafood, or meat. Today in Jai Ki Rasoi Se used green coriander, mint leaves & carrot, made spicy "Mint Coriander Fried Rice". This dish can be served with curds, raita or any masala curry

Ingredients Serving: 5

  1. Cooked Basmati Rice (Paka Huwa Basmati Chawal) - 250 grams
  2. Finely Sliced Onion (Lambi Kati Pyaz) - Medium Size
  3. Finely Chopped Carrot (Barik Kata Gajar) - 50 Grams
  4. Ginger Garlic Paste (Adrak Lasoon Paste) - 1 Table Spoon
  5. Black Cumin Seeds (Shahi Jeera) - 1 Tea Spoon
  6. Green Chilies (Hari Mirch) - 3 to 4
  7. Cashew Nuts (Kaaju) - 20 to 25
  8. Green Coriander Powder (Hara Dhaniya) - 1 Bunch
  9. Mint Leaves (Pudina) - 1 Bunch
  10. Whole Spice Powder (Garam Masala) - ½ Tea Spoon
  11. Turmeric Powder (Haldi Powder) - ½ Tea Spoon
  12. Bay Leaves (Tej Patta) - 2
  13. Oil - As Per Requirement
  14. Salt (Namak) - According to Taste

Instructions

  1. Wash and add green coriander, mint leave and green chillies in a mix jar. Make a fine paste and keep aside
  2. Heat oil in frying non-stick pan or kadai, once the oil is hot add the black cumin seeds and bay leaves. Cook them till the oil get the flavour of the seeds
  3. Add finely sliced onion and cook till they be come translucent
  4. Add ginger garlic paste and cook till the water gets evaporated from it
  5. Now add finely chopped carrot & cashew nuts and mix all. Cover and cook till carrot become soft
  6. Add the paste of green coriander, mint & green chillies. Mix and cook till oil get separated from the paste
  7. At this stage add turmeric & whole spice powder. Season it with salt according to taste. Mix all and cook for 2 minutes
  8. Finally add cooked rice. Gently mix all the ingredients and cook for another 2 to 3 minutes by covering it
  9. Now the dish is ready can be served with curd, raita or any masala curry
