ABOUT Mutton Nuqdawa RECIPE

Nuqdawa is dish from delhi comprising of mutton cooked with chana dal.It is pretty spicy and mostly cooked during winter.

Ingredients Serving: 5

  1. 500g mutton
  2. 2 cup chana dal
  3. 3-4 medium size onion
  4. Salt as per taste.
  5. 8-10 slit green chillies
  6. 1" cinnamon stick
  7. 2 Bay Leaves
  8. 8-10 whole black pepper
  9. 1 tsp ginger juliens
  10. 1 tsp Ginger paste
  11. 1 tblsp Garlic Paste
  12. 2 tsp haldi
  13. 1 1/2 tsp Red Chilli Powder
  14. 1 1/2 tsp Coriander powder
  15. 2 tsp Zeera powder
  16. 2 tsp garam masala powder
  17. 1 cup oil
  18. Coriander leaves for garnishing

Instructions

  1. Wash mutton and keep aside
  2. Soak chana dal in water for about 30 minutes
  3. Slice the onion.
  4. In a pressure cooker mix together the mutton ,sliced onion and whole spices.
  5. Now add in the salt, oil,haldi,red chilli powder, coriander powder and oil.
  6. Add ginger and garlic paste.mix well.
  7. Close the lid and pressure cook for just 1 whistle.
  8. Now open the lid and cook the meat masala mixture until oil separate.
  9. Add little water at a time if required.Do not let masala stick to the bottom.
  10. Once oil separates add in the soaked chana daal.
  11. Add in the slit green chillies and ginger juliens.
  12. Add in the garam masala powder.
  13. Cook for 4-5 minutes.
  14. Now add 5-6 cups of water.
  15. Sprinkle zeera powder.
  16. Close the lid and again pressure cook until 6-7 whistles.
  17. Garnish with coriander leaves.
