ABOUT Bitter Gourd Raita RECIPE

It is a Goan delicacy. This healthy dish is made from bitter Gourd. It's bitterness is balanced with coconut, cahewnuts , jaggery and other ingredients. The quantity of jaggery determines the taste

Ingredients Serving: 8

  1. Bitter Gourd medium 1
  2. coconut dry or fresh 2 cups
  3. jaggery powdered 3 tbsp
  4. Mustard seeds 1/2 tsp
  5. oil 2 tbsp
  6. salt 1 tsp
  7. cashew nuts 4
  8. Sesame seeds 1 tsp
  9. tamarind 1 inch piece
  10. Red chilli powder 1 tsp

Instructions

  1. Scrape and cut the bitter Gourd into very fine pieces. Remove the seeds
  2. Apply salt and set aside for 10 min.
  3. Squeeze out all the water from the bitter Gourd and fry on tava in oil on a low flame
  4. Fry the coconut on a tava till brown
  5. Splutter the mustard seeds in oil
  6. Grind together the bitter Gourd, coconut, mustard seeds, Tamarind , cashew nuts, red chilli powder and jaggery with a minimum water
  7. Add salt to taste
