Ingredients Serving: 5

  1. Mutton with bones
  2. Onion 1 chopped
  3. Long grain basmati rice 4 cup
  4. Ingredients for potli
  5. Cumin seed 1 tsp
  6. Fennel seed 1 tsp
  7. Pod of garlic 1
  8. Whole ginger 2 inch pieces
  9. black cardamom 2
  10. Cloves 4
  11. Green cardamom 3
  12. Black pepper corns 1/4 tsp
  13. Bay leaf 1
  14. Salt to taste
  15. Oil 1/4 cup
  16. chopped coriander leaves for garnishing


  1. Firstly, clean and soak the long grain basmati rice for atleast 30 minutes.
  2. Then, take a muslin cloth, add all the ingredients for potli .
  3. Now, tie it well with the string to secure all the whole spices into it to form a potli .
  4. Then, put the potli in a pressure cooker along with the mutton and 7 cups of water.  
  5. Add some salt, keep it on the heat and bring it to a boil. Once the it starts boiling, pressure cook until the mutton is just done.
  6. Now, once the mutton is done, let it release the pressure to its own. separate the mutton pieces and the Yakhni stock.
  7. Squeeze the potli very well in to the stock to extract all the flavours of spices. Discard the potli.
  8. Heat the oil in a heavy-bottomed vessel. Saute chopped onion till transparent.
  9. Ad washed and drained rice and mix well.
  10. Now ad mutton stock,salt and cook till rice has done90 percent done.
  11. Cover the lid and simmer for 15 minutes on low heat. Switch off the flame.
  12. Sprinkle some chopped coriander leaves and Mutton yakhni pulao is ready to serve.
