ABOUT Deconstructed Lemony Fiesta Dessert (Continental Cuisine) RECIPE

Lemony Fiesta Dessert is a very popular continental dessert cuisine. It is a cake and custard mix dessert with lemony flavor. Here I have made a deconstructed version of the lemony fiesta dessert by using a sponge cake layered with vanilla ice cream and topped with my homemade lemony fiesta dessert sauce. This is a very simple and easy sauce that does not have eggs, butter or artificial yellow food color. Instead it contains the natural, earthy and exotic flavors of raw turmeric, fresh lemon rind and honey. The inspiration of using raw turmeric came from Chef Kunal Kapur recipe of turmeric kulfi and the idea of deconstructed lemony fiesta dessert from Chef Sanjeev Kapoor blog.

Ingredients Serving: 4

  1. 1 8-inch sponge cake
  2. 8 scoops Vanilla ice cream
  3. For lemony fiesta dessert sauce :
  4. 4 tsp cornflour or corn starch
  5. 1 Cup water
  6. 1 tsp lemon rind (freshly grated from the outer yellow skin of the lemon)
  7. 1.5 tbsp lemon juice
  8. 1/4 cup honey
  9. 1/4 cup sugar
  10. 1 small raw turmeric

Instructions

  1. Prepare the lemon sauce. Add water, sugar and lemon rind into a container and let it come to a boil on medium heat.
  2. In the meantime grate the raw turmeric and add 1/4 tsp of the grated turmeric into the container. Mix little water into the cornflour and add into the container once the water comes to a boil. Reduce the heat. Add honey. Stir and mix continuously till the cornflour dissolves and the mixture thickens slightly. Remove the mixture from the heat and add the lemon juice. Stir and mix.
  3. Prepare the lemony fiesta dessert. Take the sponge cake on a flat board. Cut the cake horizontally into two halves. Use a round cutter to cut the cakes into 4 rounds.
  4. Place one round on each serving plate. Spread a little of the lemony fiesta dessert sauce over the cake roundels. Place two scoops of vanilla ice cream over each of the cake roundels. Pour generous amount of the remaining sauce over the ice creams and serve immediately.
