Alur Chokha (Spicy Mashed Potato)

Ingredients to make Alur Chokha (Spicy Mashed Potato)

  • 4 large potatoes boiled and peeled
  • 6-7 dried red chillies
  • 2 large onions finely chopped
  • 1 tbsp vegetable oil
  • salt to taste

How to make Alur Chokha (Spicy Mashed Potato)

  1. Heat the oil in a kadai. Add the dried red chillies. Take them out once crisp and deep fried. Turn the stove off. Let the oil stay in the kadai.
  2. Add the fried chillies to the boiled potatoes and mash well.
  3. Add salt to the mixture and mash till the chillies have mixed completely with the potatoes.
  4. Turn the stove on and the heat the chilli infused oil in the same kadai itself.
  5. Add the onions and saute till they start turning golden around the edges.
  6. Add the potato mash and fry well. Keep stirring to get the right consistency. Best eaten with rice.

My Tip:

My favourite part are the crispy (slightly burnt) bits that stick to the kadai. I fry the mixture long enough to get those crispy bits and then scrape off every last morsel! :D
