Delicious healthy Soya chunks biryani, ready in minutes from left over rice .. do try for sure this easy peasy protein rich one pot meal.

Ingredients Serving: 2

  1. Left over rice 2-3 cups
  2. Soya chunks 2 cups
  3. Vertical slices onion 1
  4. Vertically chopped tomato 2
  5. Fienly chopped garlic 2 teaspoons
  6. Fried Cashew nuts 1 tablespoon
  7. Oil 2 tablespoons
  8. Jeera 1 teaspoon
  9. Biryani masala 1 tablespoon
  10. Salt according to taste
  11. Mint leaves and coriander leaves for garnishing
  12. Raita or curd for serving

Instructions

  1. Assemble all the required ingredients
  2. Soak soya chunks in warm water for 5 minutes
  3. Vertically chopped onion and tomato and finely chopped garlic
  4. Fried onion
  5. Heat oil in a heavy bottom pan and add jeera
  6. Add finely chopped onion and garlic , saute for some time
  7. Add chopped tomato , salt to taste and biryani Masala . Saute till soft and nice aroma comes
  8. Squeeze out excess water from soaked soya chunks and add to sauteed onions and tomatoes mixture . Mix well and cook covered for few minutes .
  9. Add left over rice , mix well and cook covered on very low heat for next 5 minutes .
  10. Laslty, garnish with fresh coriander and mint leaves, fried Cashew nuts and fried onions
  11. Serve hot immediately with Raita or curd and enjoy endlessly
