Ingredients Serving: 4

  1. 200 grams Bhindi (Lady Finger/Okra)
  2. 1 Potato (Aloo) , boiled and cubed
  3. 1 Onion , finely chopped
  4. 2 Tomatoes , finely chopped or pureed
  5. 4 cloves Garlic , finely chopped
  6. 1 sprig Curry leaves
  7. 1 inch Ginger , finely chopped
  8. 1 teaspoon Coriander (Dhania) Powder
  9. 1/2 teaspoon Cumin (Jeera) powder
  10. 1 teaspoon Red chilli powder
  11. 1/2 teaspoon Mustard seeds
  12. Water , as required
  13. Salt , to taste
  14. 1/4 teaspoon Sugar
  15. Asafoetida (hing) , a pinch
  16. Cooking oil , as requiredCoriander (Dhania) Leaves , as required, chopped Lemon juice , as required

Instructions

  1. 1. To begin making the Aloo Bhindi Masala Gravy Recipe, first boil the potatoes in the pressure cooker for 2 to 4 whistles and turn off the heat
  2. 2. Once the pressure released, open the cooker, peel the skin of the potatoes and dice them. Keep aside.
  3. 3. In a heavy bottom pan; add a teaspoon of oil and the bhindi. Sprinkle salt and cook the bhindi until tender and soft. You can place a lid over the kadai, left slightly open and cook the bhindi in partial steam
  4. 4. Once done, keep the bhindi aside
  5. 5. Next step is to make the masala for the Aloo Bhindi Masala Gravy.  Heat a teaspoon of oil in a pan
  6. 6. Once it is hot, add cumin seeds, mustard seeds, asafoetida and and allow the seeds to crackle. After 10 seconds, add in the curry leaves, ginger, garlic, green chillies and saute for another minute or two
  7. 7. After a minute or two, add onions and saute until soft and translucent.
  8. 8. Next, add the tomatoes and cook till it becomes soft and mushy. Once done, add in coriander powder, cumin powder, turmeric powder, red chilli powder and let it cook for 2 minutes.
  9. 9. After 2 minutes, add the cooked potatoes and the bhindi and mix it well into the masala. Check the salt and spices at this stage and adjust accordingly
  10. 10. Give the Aloo Bhindi Masala Gravy a brisk boil. Add a little water to the Aloo Bhindi Masala, to give it a gravy consistency.
  11. 11. Add lemon juice and coriander leaves and stir. Once the masala is well combined into the Aloo Bhindi Masala Gravy, turn off the heat and serve hot.
  12. 12. Serve this simple and tasty Aloo Bhindi Masala Gravy Recipe along with Lasooni Dal, Tomato Onion Cucumber Raita and Phulka for an everyday meal
