ABOUT Egg Curry RECIPE

There are countless versions of Egg Curries in India. In fact. When it comes to curry, there are no rules. Just follow your taste buds. Sometimes I like it a little dry and other times, I add more water to make it runny and serve it with steamed rice.

Ingredients Serving: 3

  1. Boiled eggs - 3
  2. Tomatoes - 2 (Finely chopped)
  3. Potato - 1 (Sliced)
  4. Onion (Large thinly sliced) - 1
  5. Red chilies - 3 to 4
  6. Garlic cloves - 2 to 3
  7. Green chili - 1
  8. Turmeric powder - 1 tsp
  9. Cumin powder - 1 tsp
  10. Coriander powder - 1 tsp
  11. Dry mango powder - 1-tsp or lemon juice - 1/2 tsp
  12. Sugar - 1/2 tsp
  13. Chili powder - 1/2 tsp
  14. Fresh Ginger - 1/2 inch
  15. Fresh coriander to garnish
  16. Oil
  17. Salt to taste

Instructions

  1. Boil the eggs in salted water, immerse them in cold water and remove the shell. Grind and make paste of garlic, ginger, green chili and red chilies.
  2. Make small slits on the boiled eggs using a sharp knife. Rub with salt, turmeric powder and chili powder.
  3. In a deep dish pan fry the eggs slightly. They should turn slightly golden in color. When done keep aside.
  4. Do not put off the flame, add some oil and add in the sliced potatoes. Sprinkle salt and mix.
  5. Fry till the potatoes turn tender, keep aside. In the same pan add in garlic, ginger and chili paste. As the mixture slightly browns add in chopped onions, salt and cook till they chopped onions turn translucent.
  6. Add in the spices - Cumin powder, coriander powder, stir and add in chopped tomatoes.
  7. Cook for 1 minutes then add in the sugar. As the tomatoes turn soft add in dry mango powder or juice of half a lime followed by half a cup of water.
  8. Cook for another 1 minute, add in the fried potatoes and the boiled eggs. On a low flame cook for at least 5 mins.
  9. Serve hot with a garnish of fresh coriander.
