ABOUT Bedai or Bedmi puri / poori RECIPE

If you have even gone to UP and had breakfast, this is one of the most loved breakfast. You will find this in every nook and corner at sweet shops or restaurants.

Ingredients Serving: 5

  1. 1 tbsp clarified butter/ ghee
  2. 1 cup whole wheat flour
  3. 2 tbsp semolina/sooji
  4. 1 tsp garam masala powder
  5. 1 big black cardamom
  6. 2 cloves
  7. 1 tbsp cumin seeds
  8. 1 tbsp of fennel powder
  9. 1 tsp red chilli powder
  10. 1/2 cup soaked urad daal(soaked for 4-5

Instructions

  1. Dry Roast black cardamom,cloves and cumin seeds. Make a coarse powder of these spices and keep aside.
  2. Grind soaked urad daal coarsely but should not be a paste
  3. Add all the powdered spices along with cardamom mixture in it and mix it nicely.
  4. In a large bowl take wheat flour,semolina and rub in the daal mixture nicely with the help of your hands into it
  5. Add 1 tbsp of clarified butter/ghee. Make sure they are mixed properly. Knead a little stiff dough by adding little water if required.
  6. Make small pooris and fry them till they are fluffy and crisp.
  7. Serve with your favourite aloo ka jhor or kaddu ki sabzi or boondi raita whatever you like.
