ABOUT Sooji Mawa Barfi RECIPE

Semolina or Sooji is used mostly used to make, Idli, Dosa, Upma, Halwa or Laddu. It has high protein content and is low in fat. It also has low glycemic index that makes it great for diabetics as well as people who are on a weight loss plan. Today in Jai Ki Rasoi Se used this ingredient and made "Sooji Mawa Barfi".

Ingredients Serving: 10

  1. Semolina (Sooji) - 250 Grams
  2. Sugar (Shakkar or Chini) - 250 Grams
  3. Milk Powder (Doodh Ka Powder) - 250 Grams
  4. Milk Solid (Mawa or Khoya) - 250 Grams
  5. Pure Ghee (Asali Ghee) - 250 Grams
  6. Milk (Doodh) - 250 liter
  7. Cardamom Powder (Elaichi Powder) - 1/2 Tea Spoon
  8. Raisins (Khishmish) - 10 to 15
  9. Almonds (Badam) - 10 to 15
  10. Pistachio (Pista) - 10 to 15
  11. Silver Sheet for garnishing

Instructions

  1. Heat pure ghee in a non-stick pan or kadai. Once the e ghee is hot, add semolina and mix it. Stir and cook it become light brown
  2. Add milk and mix it. Stir and cook till the semolina become soft
  3. At the stage milk powder and milk solid and mix them. By stirring it continuously cook it for 5 to 6 minutes till it turns to golden brown
  4. Add grated almonds, pistachio, raisins and cardamom powder. Mix all and cook for another 2 minutes
  5. Finally add sugar and mix it. Cook it till the ghee gets separated from the semolina and becomes a lump. Keep it aside to get it cool
  6. Take a plate and grease it. Spread the lump evenly in the tray. Garnish it with silver coating and dry fruits. Keep it aside to get it cool
  7. With help of knife cut it to square or diamond shape as per your requirement
  8. Now the dish is ready, serve it by garnishing with finely chopped almonds and cashew nuts
