About Veggie Orzo Pasta Recipe

This healthier vegetarian take on classic fried rice uses orzo instead of rice and fresh vegetables.

Veggie Orzo Pasta


Ingredients to make Veggie Orzo Pasta

  • carrots peeled and diced 2No.
  • onion finely diced 1Medium size
  • garlic cloves minced 3-4No.
  • eggs lightly beaten 3No.
  • Uncooked Orzo pasta 250gms
  • Fozen peas 3/4 cup
  • French beans finely chopped 1/2 cup
  • Thinly sliced green onion 1/2 Cup
  • Soy sauce 1/4 Cup
  • Ground ginger 1/2 tsp
  • Salt and pepper to taste

How to make Veggie Orzo Pasta

  1. In a deep pan bring 500 ml salted water to a boil. 
  2. Add in 1 cup of orzo, simmer for 10 minutes, test for doneness.
  3. Drain cooked pasta and keep aside.
  4. Heat a large pan over medium-high heat.
  5. Saute carrot,beans,peas,onion, and garlic in 1 tablespoon oil until veggies are almost tender but not fully cooked.
  6. Transfer vegetables to a bowl and set aside.
  7. In same pan, heat remaining 1 tablespoon oil over medium heat.
  8. Pour beaten eggs into pan and let cook, pushing edges to center with a spatula until fully cooked.
  9. Fold egg in half and gently roll up. Finely slice egg and set aside.
  10. Transfer cooked vegetables back to pan and add orzo, cooked egg,green onion, soy sauce, ginger and add salt and pepper to taste. 
  11. Heat orzo pan over medium-high heat, stirring occasionally until hot. 
  12. Garnish with chopped spring onions and serve hot.

My Tip:

Vegetables can be used as per individual choice. Egg is totally optional.
