ABOUT Roasted Red Bell Pepper Hummus RECIPE

Hummus is the ultimate healthy snack to have on hand… it’s loaded with protein, fiber, and heart-healthy fat. With the goodness of red bell pepper, this hummus is creamy, smoky, spicy, slightly sweet, garlicky goodness… a flavorful “twist” on an old favorite. Enjoy!

Ingredients Serving: 4

  1. 400 grams of chick peas
  2. 4-5 garlic cloves peeled
  3. 2 medium sized red bell peppers
  4. 1/3 cup lemon juice
  5. 1/3 cup of tahini paste
  6. Salt to taste
  7. Crushed Black Pepper to taste
  8. 3 Tablespoon olive oil for blending+2 tablespoon for grilling

Instructions

  1. soak the chick peas overnight in sufficient water
  2. drain the water the next day and boil the peas until soft
  3. once cooled. place them in the center of a towel and fold the towel from both ends covering the beans well
  4. now brush/slightly press against the peas to peel off their skin
  5. place them in a food processor
  6. rinse and roughly chop the bell peppers after desseding them
  7. heat 2 tablespoon oil in a grill pan
  8. place the chopped bell peppers on the pan and roast/grill till slightly charred on both sides(approximately 4-5 minutes each side)
  9. take off heat once grilled and let cool off on a plate
  10. once cooled, peel off the skin and discard them
  11. add the bell peppers in the food processor
  12. add the garlic next after roughly chopping them
  13. follow it up by tahini paste and olive oil
  14. pulse or blend until a smooth paste is obtained
  15. once done, add salt and black pepper to taste(add another tablespoon of olive oil if the hummus looks too dry)
  16. pulse for a few seconds again
  17. our hummus is now ready
  18. transfer the hummus into a serving bowl
  19. if you like it chilled, refrigerate for an hour before serving
  20. enjoy the healthy hummus with pitas, falafels,etc
