ABOUT Chicken Chengezi RECIPE

Old Delhi was the place of kings and nawbabs. Many royal dishes originated from old Delhi. One such dish is Chicken Chengezi. It is named after the great warrior Chenghez Khan.

Ingredients Serving: 4

  1. FOR CASHEW ONION PASTE:
  2. 2 medium onion sliced
  3. 3 tbsp cashew soaked
  4. 3 tbsp ghee
  5. FOR MARINADE:
  6. 1 kg chicken with bone
  7. 1/2 tsp turmeric pwd
  8. 2 tsp lime juice
  9. 2 tsp kasmiri red chili powder
  10. 1 tsp garam masala pwd
  11. 2 tsp ginger garlic paste
  12. 3 tbsp tomato puree
  13. 3/4 cup curd
  14. 1 tsp salt
  15. FOR GRAVY:
  16. 2 tbsp+1 tbsp ghee/oil
  17. 2 tbsp ginger garlic paste
  18. 1 cup tomato puree
  19. 1 tsp coriander pwd
  20. 1/4 tsp chaat masala
  21. 1/4 cup cream
  22. 1 tsp kasmiri red chili powder
  23. Salt to taste
  24. Garam masala 1 tsp

Instructions

  1. Wash and pat dry chicken.
  2. Marinade the chicken with above mentioned ingredients for 30 min.
  3. Heat 3 tbsp ghee in a pan.
  4. Fry the sliced onions till golden brown.
  5. Make a paste of fried onion and soaked cashew and keep aside.
  6. FOR GRAVY:
  7. Add ghee / oil in a pan.
  8. Add ginger garlic paste and saute.
  9. Add the tomato puree and cook until raw smell goes.
  10. Add coriander pwd, chaat masala pwd, kashmiri red chili powder, garam masala pwd and cook.
  11. Add salt.
  12. Add cashew onion paste.
  13. Add 1 cup water and let it boil.
  14. Gravy is ready.
  15. In another pan add 4 tbsp oil.
  16. Shallow fry the chicken until 80% cooked.
  17. Now add this chicken in gravy and cook for 15 minutes.
  18. Add ghee, cream, kasuri methi.
  19. Serve hot with roti, paratha, rice etc.
