ABOUT Schezwan Quick Fried Rice RECIPE

Schezwan fried rice is a popular Indo-Chinese dish made by stir frying the rice with choice of vegetables and Schezwan powder or sauce. It is extremely simple and easy to prepare.

Ingredients Serving: 4

  1. Cooking oil 1/4 cup
  2. Finely chopped onion 1 cup
  3. Beans chopped 1 cup
  4. Capsicum chopped 1 cup
  5. Tomato chopped 1 cup
  6. Curd 1 cup
  7. Pepper powder 1 tsp
  8. Coriander leaves chopped 1/4 cup
  9. Everest Schezwan fried rice powder 3 tsp
  10. Salt to taste
  11. Sugar 1 tsp
  12. Green chilli chopped 1
  13. Red chilli powder 1/2 tsp
  14. Ginger chopped 1 inch
  15. Garlic cloves 8-10
  16. Water
  17. Rice 2 cup
  18. For raita... Tomato finely chopped 1 cup
  19. Cucumber finely chopped 1 cup
  20. Onion finely chopped 1 cup
  21. Curd 2 cup
  22. Green chilli chopped 2
  23. Coriander leaves chopped 2 tsp
  24. Salt to taste

Instructions

  1. Wash rice, add 3 cups of water and pressure cook for 2 whistles.
  2. Allow it to cool down completely.
  3. Pour hot oil to a hot pan, fry garlic cloves until golden brown.
  4. Add onion and saute until translucent.
  5. Stir in salt, sugar, chopped ginger, green chilli, pepper powder, red chilli powder.
  6. Add chopped veggies fry until soft.
  7. Add curd and Schezwan masala powder.
  8. Now you get good aroma and sauce consistency.
  9. Now add cooked and cooled rice, mix and stir fry for 2 minutes.
  10. Serve in hot with raita.
  11. Add all chopped cucumber, onion, tomato, green chilli ingredients in a mixing bowl.
  12. Add salt to taste, curd and coriander leaves.
  13. Mix well and serve.
