ABOUT Tomato Canapes RECIPE

Tomato canapes are so easy to assemble and ready to serve in few minutes. Since I had run out of mint chutney, so used lime juice. Grated beetroot can also be added here for toppings. These healthy canapes can be used as kids snack, a great party appetizer.

Ingredients Serving: 2

  1. Tomato (medium) 2 no.
  2. Potato (boiled and chopped into small cubes) ½ cup
  3. Carrot (grated) ¼ cup
  4. Onion (finely chopped) 1/8 cup
  5. Coriander leaves (finely chopped) 2 tablespoon
  6. Mint leaves (finely chopped) As needed
  7. Red chili powder 1 teaspoon
  8. Lime juice 2 tablespoon
  9. Tamarind chutney 2 tablespoon
  10. Sev 2 tablespoon
  11. Salt As needed

Instructions

  1. Wash and clean all tomatoes properly.
  2. Cut the tomatoes in thin slices and keep aside.
  3. Next in a mixing bowl, take chopped boiled potatoes, grated carrot, chopped onion, chopped coriander, red chili powder and salt.
  4. Gently mix everything well and keep aside.
  5. Now take a serving platter and arrange the tomato slices.
  6. Place 1 tablespoon of the potato-carrot mixture on each slice.
  7. Then top with tamarind chutney, lime juice and finally sprinkle some sev and chopped mint leaves on each tomato slice.
  8. Serve immediately and enjoy these healthy tomato canapes !
