Creamy Spinach and Corn Toast

ABOUT Creamy Spinach and Corn Toast RECIPE

Although spinach is a powerhouse of minerals and vitamins, it can taste quite flat. Combine it with sweet and luscious corn kernels and add some creaminess and what you have is a sure shot winning combination. This hot, creamy and cheesy sandwich is very easy to whip up and super healthy too.

Ingredients Serving: 4

  1. 1 small bunch spinach leaves chopped and washed
  2. 1 cup sweet corn kernels, boiled
  3. 1.5 tbsp butter
  4. 2 tbsp +1 tsp maida or all purpose flour
  5. 3 cloves of garlic grated (and not chopped)
  6. 1 cup milk
  7. 1/2 cup grated cheddar cheese
  8. 1/3 cup hot water
  9. 2 tsp salt
  10. 1 tbsp oregano (I used Dominos' oregano- 4 packets of those) if you don't have it, use all purpose seasoning
  11. 6-8 slices of white or brown bread

Instructions

  1. Blanch the spinach (put it in boiling water which has salt for 2-3 mins and immediately put it in cold water) Drain all water and chop the spinach.
  2. In a hot pan add butter. Once it has melted add the maida. Keep the flame medium to low. Stir this continuously with a whisk. Please use a whisk and not a ladle.
  3. While stirring this roux or mixture, add milk and grated garlic, alt and oregano/all purpose seasoning
  4. Keep stirring and add the chopped spinach and corn kernels
  5. Now the sauce must have thickened quite a lot, add some of the hot water and continue stirring. Add the grated cheese and stir. Switch off the gas. Let this mixture cool completely.
  6. Now spread this mixture on a slice of bread, place another slice of bread on it and toast it on a skillet or tawa by drizzling a bit of melted butter. You can also use oil but i prefer using butter.
  7. Cut the toast into halves and serve and relish with chutney or ketchup or have it as is!
