Ingredients Serving: 4

  1. For chole Chickpea - 500 gms
  2. Clarified butter / ghee - 1 cup
  3. Whole red chilly - 2 - 3
  4. Whole coriander seeds - 1 tsp
  5. Cumin seeds / jeera seeds - 1 tsp
  6. Chopped onion - 2 medium
  7. Ginger garlic paste - 1 tsp
  8. Black pepper - 3 - 4
  9. Cinnamon - 1 inch stick
  10. Mace / javitri - 1 piece
  11. Whole cloves - 3 - 4
  12. Green cardamom - 4
  13. Anardana / pomedranate seeds - 1/2 tbsp
  14. Tomato paste - 1/2 cup
  15. Chole masala powder - 1 tsp
  16. Turmeric powder - 1/2 tsp
  17. Salt - to taste
  18. Chopped coriander leaves - 1 tbsp
  19. Baking powder - 1 tbsp
  20. FOR KHASTA KACHORI
  21. All purpose flour - 1 cup
  22. Salt - to taste
  23. Clarified butter - 2 tbsp
  24. Clarified butter - for frying

Instructions

  1. FOR CHOLE Dry roast whole red chilly,whole coriander seeds,green cardamom,whole cloves,cumin seeds,black pepper,mace and cinnamon and lastly add anardana / pomgranate seeds.
  2. In a blender add all dry roasted garam masala to make a fine paste.
  3. Soak chickpea over night and add 1 tbsp of baking powder.
  4. Pressure cook with salt and 2 cup of water for 10 mins.
  5. Drain the chickpea and store the water.
  6. Heat clarified butter / ghee in a pan fry the sliced onion till brown.
  7. Add ginger garlic paste,chole masala,turmeric powder and saute for 2 - 3 mins.
  8. Add tomato paste and saute for 2 - 3 mins.
  9. Add anardana /pomegranate seeds,salt and mix well.
  10. Now add boiled chickpea and saute for 3 - 4 mins
  11. Add chickpea water
  12. Add roasted garam masala and cook simmer for 10 mins.
  13. Garnish with coriander leaves.
  14. Serve chole with kachori
  15. For khasta kachori Take a large bowl add all purpose flour,salt and 2 tbsp clarified butter and mix well.
  16. Make a crumble texture.
  17. With the help of little water make a stiff dough.
  18. Keep aside for 15 mins.
  19. Divide the dough into balls and roll out kachori
  20. Heat clarified butter in a pan.
  21. Deep fry the kachori in hot oil until golden and crispy.
  22. Serve hot with chole
