About Baked stuffed Tomatoes in creamy spinach curry . Recipe

My recipe is very healthy and innovative..Here i have baked the tomatoes stuffed with boiled potatoes infused with mint leaves .The baked stuffed tomatoes are dipped in rich creamy palak curry having desi ghee tadka.

Ingredients to make Baked stuffed Tomatoes in creamy spinach curry .

  • tomatoes 4 medium sized
  • Boiled potatoes 2 medium sized
  • spinach frozen 250 g
  • sesame seeds 20 g
  • onion 1 medium sized
  • peanuts roasted and powdered 30 g
  • cumin 10g
  • heeng a pinch
  • ginger garlic paste 1 teaspoon
  • turmeric powder 1 teaspoon
  • Degi mirch 1 teaspoon
  • Garam masala 1 teaspoon
  • mint leaves chopped 20 g
  • green chillies 2
  • Desi ghee 2 table spoon
  • Fresh cream 1 teaspoon
  • chaat masala 1 teaspoon
  • Roasted cashews 4-5

How to make Baked stuffed Tomatoes in creamy spinach curry .

  1. Wash tomatoes and scoop out its pulp
  2. Keep the pulp ..which would be added later in the tadka .Now fill the tomatoes with mashed preboiled potato masala having chopped mint leaves in it ..
  3. Grease the tomatoes from outside and sprinkle some sesame seeds and chaat masala too and keep it in the preheated Oven for 10 minutes at 180 °C .
  4. Once they are baked the skin would give a little shrivelled appearance. Do not overbake else the juice of tomatoes starts oozing out.
  5. Now keep the baked tomatoes aside and thaw the chopped frozen spinach .
  6. Now boil it in the microwave .
  7. Once boiled , cool it and blend it in a mixer by adding Peanut powder to give a nutty aroma .
  8. Now in a wok add desi ghee on a medium flame and allow it to become warm . Add cumin and ginger garlic paste. After sometime add chopped onion and fry them till they become translucent.
  9. Add the tomatoes pulp and the remaining chopped tomatoes and slit vertically green chillies . Also add turmeric and degi mirch powder and heeng
  10. Now add the spinach puree , along with salt . Add garam masala too .let it simmer for sometimes . Adjust its consistency ..Add little cream now .Mix it thoroughly .
  11. Now in a plate or a bowl pour this delicious aromatic spinach curry and add baked stuffed tomatoes in it ..
  12. Garnish with little cream and sesame seeds and roasted cashews . Enjoy my innovative delicious healthy baked red stuffed tomatoes balls in a green spinach curry pond.with laccha paranthas or plain rice ..

My Tip:

You can stuff any stuffing like cottage paneer or left over Quinoa. U can also sprinkle little cheese on the tomatoes.
