Cabbage Pakora kadhi from Rajasthani Gharana

Ingredients to make Cabbage Pakora kadhi from Rajasthani Gharana

  • For pakoras:
  • 3/4 cup gramflour /besan
  • 2 cups grated cabbage
  • 2 tbsp chopped onion
  • 1 tbsp chopped garlic
  • 1 tbsp chopped ginger
  • 1/2 TSP CHOPPED green chillies
  • 2 tbsp chopped coriander leaves
  • 1 tsp cumin seeds
  • 1/4 tsp Carom seeds / Ajwain
  • 1 pinch baking soda
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • salt to taste
  • 2 tsp heat oil
  • 2 cups oil,for frying
  • For kadi :
  • 1 tbsp oil
  • 200 gram sour curd
  • 3 tbsp gramflour/ besan,dry roasted
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • salt to taste
  • 1" cinnamon stick
  • 4 cloves
  • 4 dry whole red chilli
  • 1/2 Tsp saunf
  • 1/2 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp methi seeds
  • 1 tsp finely chopped ginger
  • 15-16 curry leaves
  • 2-3 tbsp chopped coriander leaves

How to make Cabbage Pakora kadhi from Rajasthani Gharana

  1. For pakoras:in a large bowl put all the ingredients of pakoras.
  2. Mix till it is well combined,no need to add water.
  3. Heat adequate amount of oil,fry the pakoras in batches,fry till they are crisp and golden.
  4. Remove the fried pakoras, place them on a kitchen paper towel, so that extra oil is absorbed.
  5. For kadhi: in a bowl take sour curd, gramflour, turmeric powder, chilli powder, salt.
  6. Whisk it till there is no lump and well combined.
  7. In a plate arrange all the whole spices for kadhi.
  8. Heat oil in a pan,add cumin,saunf, coriander seeds,methi seeds, whole red chilli, cinnamon, chopped ginger,cloves,curry leaves fry it for couple of minutes or till they are splutter.
  9. Add gramflour and curd mixture cook it for 5-6 minutes in medium flame,stir continuously ,add water if needed,
  10. Put off the flame, add chopped coriander leaves,just before serving add pakoras and enjoy it.

My Tip:

Curd must be sour
